SALMON & TROUT RECIPES

SALMON RUB
1 tbsp Paprika
1 tbsp Chili powder
1 tsp Kosher salt
1 tsp Sugar
tsp Garlic powder
tsp Onion powder
1 tsp Poultry seasoning
tsp Black pepper
tsp White pepper
tsp Oregano
1/8 tsp Cayenne
tsp Cumin

Combine all ingredients in a small bowl and set aside. Place fillet skin side down on a piece of aluminum foil that has been sprayed with Crisco or Pam. Rub top of fillet with prepared rub and let sit for about hour. Heat grill to medium. Place fillet (on the foil) on grill and cook for about 15 minutes (average). Enjoy with or without glaze (below).

SALMON GLAZE
6 oz. dark brown sugar
4 oz. unsalted butter
3 tbsp soy sauce
cup Dijon mustard

Melt brown sugar and butter in saucepan add soy sauce and mustard and beat together. Brush on fish before cooking.
